The Details
100% Pinot Noir organically cultivated in Gevrey-Chambertin , 45+ year-old vines. 30-50% of the grapes macerate whole-cluster for 12-13 days in open wood vats prior to racking to barrel for spontaneous fermentation and élevage. Never more than 20% new oak. Bottled unfined, unfiltered, minimal-none added SO2 depending on the vintage. 12.5%ABV
