The Details

50/50 biodynamically cultivated Gewürztraminer and Pinot Gris from 25 year-old vines planted to clay limestone soils with a southerly exposure. Grapes are hand-harvested, destemmed and macerate for 8 days prior to pressing. Spontaneous fermentation in stainless steel vat prior to bottling unfined, unfiltered, no additional SO2. 1 year resting in bottle prior to release.
