The Details
100% old-vine Gamay (70-90 years-old) planted to deep gravelly/sandy soils just outside Thierry's Childhood home in the Touraine. Grapes are hand-harvested and macerate whole-bunch for 2 months prior to pressing. Spontaneous fermentation and aging for 15 months thereafter in neutral barrel. Bottled unfined, unfiltered, no additional SO2.
