100% Chenin Blanc from 3 parcels that range in age from young (15 years-old) to very old (90+). Grapes are hand-harvested from the parcels whose soils are red sand/quartz/gravel/schist. Directly pressed to stainless steel tank, the juices are blended prior to the start of spontaneous fermentation. Spontaneous fermentation and aging in stainless steel before being bottled unfined, unfiltered, no additional SO2 as of 2023.
