The Details
100% Grolleau, from a .36 ha plot over argilo-clay soils with some quartz. The fruit is macerated on the skins for 24 hours, fermented in tank and aged on the lees in bottle for 3 years, before being disgorged and aged for another six months before release. Unfined and unfiltered, with no additional SO2.
