The Details
An orange wine like no other... Chiarofiore aka "Flower of Light" is the intensively deliberate triple-pass-harvest of Trebbiano: underripe harvest of Trebbiano that gets directly pressed; weeks later, a main peak-ripeness harvest of Trebbiano which sees ample time on the skins; a final harvest of Botrytized (noble rot) Trebbiano (~10% of the final blend) finishes the breakdown. Spontaneous fermentation and aging all in stainless steel. Unfined, unfiltered, minimal added SO2.
