The Details
Sparkling Orange! Biodynamically cultivated Trebbiano from old vines planted in the clay/limestone hills of the Southerly Tuscan Val di Chiana. Grapes are hand-harvested at two separate times: early and late harvest. Each get 1 month on the skins, pressed, and eventually blended. Spontaneous fermentation and aging in stainless steel before bottling with the addition of sweet Vin Santo to kickstart secondary fermentation in bottle. Disgorged, unfined, unfiltered, minimal added SO2.
