100% Riesling. Grapes hand harvested and foot stomped before being left overnight on the skins. Fermented using wild yeasts and pressed into ⅔ stainless steel tanks and ⅓ puncheon. Unfined, unfiltered, no SO2. 

High acidity, flinty, razor sharp.
