The Details
Riesling, Chardonnay and Pinot Gris. Grapes are hand harvested and undergo separate fermentations. The Pinot Gris was foot crushed, left to kickstart fermentation overnight and then pressed to stainless steel. The Chardonnay is directly pressed into barrique. The Riesling is foot crushed, left overnight to kickstart fermentation, and racked into barrique. All three are blended and allowed to rest two months before bottling. Unfined, unfiltered, no SO2.
*Tends to be quite reductive upon opening, decanting recommended*
