The Details
100% Chardonnay from 40 year-old vines (biodynamically cultivated) on a limestone scree outside Poligny in the Jura. Grapes are hand-harvested, directly pressed and spontaneously fermented and aged in neutral wood for 12 months. Bottled in 2020 with some of the '20 harvest must. Secondary fermentation in-bottle followed. Aged on the fine lees for almost three years. Disgorged in August of 2023. Unfined, unfiltered, no additional SO2.
