The Details

70% Pineau d'Aunis, 24% Cabernet Franc, 3% Orbois, 3% Chenin Blanc. Grapes are hand-harvested, destemmed and co-ferment spontanouesly in tank for an overnight maceration prior to pressing. Élevage in tank for a few months before bottling unfined, unfiltered, minimal (<15ppm) added SO2.
