The Details
From southern Lombardy, this is 100% Lambrusco Ruberti. Grapes are hand-harvested, destemmed, macerate for 3-4 days prior to pressing in a small vertical basket press. Juice spontaneously ferments and settles in stainless steel tank for ~6 months. Bottled with fresh juice/must from the same vintage to kickstart secondary fermentation in bottle. Unfined, unfiltered, minimal (<15ppm) added SO2.
