The Details
100% Lambrusco Ruberti from organically cultivated young (5-15 year-old) vines where Lombardy runs into the Veneto. Grapes are hand-harvested, destemmed, and macerate for 3-4 days prior to pressing in a small vertical basket press. Spontaneous fermentation (via pied de cuve which also is dosed with <10ppm SO2) and aging in stainless steel prior to bottling with the addition of fresh must in order to trigger secondary fermentation in-bottle a la rifermentazione. Unfined, unfiltered, no additional SO2.
