The Details
This is a deceptively complex rosé rife rose hips, cranberry, jasmine, and underripe strawberries from Hervé Villemade who tends 25 hectares of vines in Cheverny/Cour-Cheverny in France's Loire Valley.
Vinification: A Blend of 50% Pineau d'Aunis, 25% Gamay, 25% Côt hand-harvested from vines grown in clay, limestone, and silex soils in the Cher Valley (Loire). The grapes are gently, directly pressed and undergo spontaneous fermentation (ambient yeasts; no temp. control) in vats before a short élevage (7-months). Bottled unfined, unfiltered with a microdose additional SO2. 13%ABV
