The Details

100% organically cultivated 35 year-old Pinot Noir from Mercurey & Saint Mard de Vaux. A combination of granite/clay/limestone soils. Grapes are hand-harvested, semi-carbonically spontaneously ferment in a single 3500L vat prior to pressing. Élevage for 8 months in neutral oak before being bottled unfined, unfiltered, no additional SO2. 12.5% ABV
