The Details

A field blend of indigenous Sicilian white grapes, including Catarratto, Insolia, Grillo, Grecanico, Minnella Bianca and Carricante, all harvested at different levels of ripeness. Half of the blend is macerated on the skins for 7 days, with the rest pressed and blended in. Aged in stainless on the lees for 5 months, before bottling unfined, unfiltered with no SO2.
