About the wine
50% Carricante (half is macerated for 5-days, half directly pressed into a combination of chestnut barrel & stainless steel tank), 20% Grillo (macerated for a week prior to pressing into stainless steel tank), 20% Inzolia (directly pressed into stainless steel tank), 10% Catarratto & Grecanico (directly pressed into chestnut barrel). The juices separately complete spontaneous fermentation prior to blending, a short maturation on the fine lees, and thereafter bottling unfined, unfiltered, no additional SO2. 12.5%ABV
