The Details

100% Macabeu from ~35 year-old vines. Grapes are hand-harvested, destemmed by hand on an old zaranda, and macerate for a few days prior to pressing. Spontaneous fermentation and aging in neutral vessel for a year before bottling unfined, unfiltered, no additional SO2. 12% ABV
