The Details
"La Gouzotte" aka the 'vinegrower's billhook' (pruning knife). 100% Pinot Noir from ~40 year-old vines in the Hautes Cotes de Nuits. Grapes are hand-harvested, 100% whole-bunch spontaneously fermented in contact with the skins for 1 month prior to pressing. 18 month maturation in tank prior to bottling unfined, unfiltered, no additional SO2.
