100% Pinot Gris hand-harvested from vines grown in granitic, sandy, silty soils. Long, smooth pneumatic press without crushing. Spontaneous fermentation takes place over the course of 1-3 months in old neutral oak casks before being raised for 4-6 months on the fine lees. Unfined, unfiltered, little to no additional SO2. 13%ABV
