About the wine
Pinot Blanc, Auxerrois, and Riesling hand-harvested from silt soils. Slow, direct pneumatic press. Wine is bottled with slight dosage to kickstart secondary fermentation. Aged 36 months on the lees in bottle before disgorgement. Unfined, unfiltered, minimal to no SO2. 12.5% ABV.
