The Details
Chardonnay, Merlot, Pinot Noir, and Seyval Blanc from around Seneca Lake planted with eastern exposure in glacial silty loam soils. Grapes are hand-harvested and spontaneously ferment separately as follows: Chardonnay and Merlot whole-cluster, co-macerate for 10 days. Later picks of Pinot Noir and Seyval blanc whole-cluster macerate for 14 days prior to pressing. Juices are blended in 40hL neutral oak foudre and spontaneously ferment and age for 10 months thereafter. Bottled unfined, unfiltered, no additional SO2. 11%ABV
