The Details

From biodynamically cultivated vines in Dambach-la-Ville in Alsace, this pitch-perfect crémant is composed of Pinot Blanc, Auxerrois, & Riesling. Grapes are not crushed prior to a gentle pneumatic pressing. Spontaneous fermentation prior to bottling with the addition of its own must/sugar for secondary fermentation in bottle. Aged 36+ months sur lie prior to disgorgement. Bottled unfined, unfiltered, no additional SO2. 12.5%ABV
