The Details
Skin-Contact pét-nat of 100% Azal, a rare Portuguese variety from southwest Vinho Verde in the north of Portugal. Grapes are hand-harvested, macerate for 4 weeks in amphora prior to pressing and bottling with 16mg of sugar still in the wine, left to finish primary fermentation to full dryness a la ancestral method. Unfined, unfiltered, 25ppm SO2 at disgorgement.
