The Details

100% parcellaire Pinot Bianco organically cultivated at 770m elevation in the mountains of Alto-Adige, from the 'Himmelsleiter' (tr.: Ladder to Heaven) site. Grapes are hand-harvested, destemmed and pre-fermentatively macerate for a few hours before pressing. Spontaneous fermentation and aging in neutral acacia barrel for 1 year sur lie before being bottled unfined, unfiltered, minimal added SO2.
