The Details

From Cati Ribot in Santa Margalida on the northern coast of Mallorca, this is a rosé sparkler composed of 100% Escursac, a native Mallorcan variety. Grapes are hand-harvested, destemmed and macerate for a few hours before pressing. Spontaneous fermentation for 15 days in stainless steel. Bottled with the addition of a small amount of unfermented late-harvest Escursac must to kickstart secondary fermentation in bottle. Disgorged after 6 months in bottle. Unfined, unfiltered, no additional SO2. 

Bosquet is a Mallorquin word for a "troublemaker" or "good-for-nothing." Label art by Cati’s daughter, Neha.
