The Details

From Cati Ribot in Santa Margalida on the northern coast of Mallorca, this is a field-bended co-ferment of red and white grapes (Escursac, Callet, Callet Negrella, Esperó Gall, Gorgollassa, Mantonegro). Grapes are hand-harvested, directly pressed and spontaneously ferment and age for 5 months thereafter in a combination of stainless steel tank and neutral wood. Bottled unfined, unfiltered, no additional SO2.
