The Details

Parcellaire, biodynamically farmed Aligoté (doré) from vines grown in deep alluvial soils between Ladoix & Corgoloin. Grapes are hand-harvested, crushed and very slowly pressed over the course of 6 hours. Spontaneous fermentation with pied de cuve in 228L & 600L neutral barrels. Aged for 12 months in the same barrels. Bottled unfined, coarsely filtered, minimal added SO2. 12% ABV
