The Details
Parcellaire - 100% biodynamically cultivated Aligoté (doré) from 45 year-old vines planted on the slope of a valley adjacent to the village of Fussey in the Hautes-Cotes at 470m elevation. Grapes are hand-harvested, crushed and very slowly pressed to 228 & 600L neutral barrels for spontaneous fermentation with pied de cuve and 12 month élevage thereafter. Bottled unfined, coarsely filtered, minimal added SO2. 12% ABV
