The Details

100% biodynamically cultivated Chardonny from Maranges & some négoce fruit from farther south in the Beaujolais. Grapes are hand-harvested, crushed, and very slowly pressed over 6 hours to 228L & 600L barrels for spontaneous fermentation with pied de cuve and élevage thereafter before being bottled unfined, unfiltered, minimal added SO2. 12.5%ABV
