The Details
An ode to his grandfather, this is Olivier's red wine composed of mainly Cabernet Franc with bits of Pineau d'Aunis and Grolleau all from the Les Bordages parcel not far from his house where the soils clay-dominant and the vines on average 60 years-old. Grapes are hand-harvested, spontaneously co-fermented and co-macerated for a short period of time prior to pressing and aging in neutral barrel. Bottled unfined, unfiltered, minimal added SO2. Ā
