The Details

100% Chenin Blanc from 2 different parcels on the famed Mont Benault of the Côteaux du Layon (whose modern champion, Richard Leroy, first gained prominence for his remarkable dry Chenin grown on this hill): Les Cailloux & Le Clos des Plantes. Grapes are hand-harvested and whole-bunnch directly pressed in a vertical wooden press. Spontaneously fermented and aged for 10-12 months in stainless steel tank prior to bottling unfined, unfiltered, minimal added SO2.
