The Details
100% Sauvignon Blanc from organically cultivated vines that average 40 years-old planted to clay/limestone soils of the Cher Valley. Grapes are hand-harvested, whole-cluster pressed to large neutral oak tank for spontaneous fermentation and 6 month élevage before bottling unfined, unfiltered, minimal added SO2.
