The Details
Based in Anjou's Champ-sur-Layon this is 100% Chenin Blanc that is a mix of old-vine fruit from his Mille Sabords parcel and some younger vine fruit he has started working with, owing to a tough vintage. Grapes are hand-harvested, directly pressed, and spontaneously ferment and age for 1 year in neutral vessel before bottling unfined, unfiltered, no additional SO2.
