The Details
100% Chardonnay sourced from organically grown vines on clay/limestone soils in the north of the Mâconnais and from the villages of Peronne, Uchizy, & Saône. Grapes are hand-harvested and directly pressed to stainless steel tank. Spontaneous fermentation (and malo) take place in stainless steel tank as well as 10 months maturation. Bottled unfined, unfiltered, minimal (<20ppm) added SO2.
