Ouillè -- 100% biodynamically cultivated Savagnin from gray marl soils. Hand-harvested, pneumatically pressed whole-clusters. Spontaneous fermentation in 228L neutral barrels. Élevage, regularly topped-up, for at least 18 months sur lie. Bottled unfined, unfiltered, no additional SO2. 13% ABV
