The Details

100% Savagnin from ~40 year-old vines organically farmed at Tournelle in the Jura. Grapes are hand-harvested and whole-bunch pressed in a pneumatic press. Spontaneous fermentation in tank prior to racking to neutral barrel for 18 month élevage (ouillé) before bottling unfined, unfiltered, no additional SO2.
