The Details

Gamay blended with a little Chenin, Groslot, and Cabernet Sauvignon from organically cultivated 10 to 50 year old vines on Schist. Grapes are destemmed and see a short maceration before spontaneous fermentation and élevage (6 months) in stainless steel. Bottled unfined, unfiltered, no additional SO2. 10%ABV
