The Details

100% Côt organically cultivated on clay/limestone soils in Touraine in the Loire. Grapes are hand-harvested, macerate for a few weeks before pressing. Spontaneous fermentation and aging for 8 months in fiberglass tank. 10ppm SO2 added during racking. Bottled unfined, unfiltered, no additional SO2. 12.5% ABV
