Biodynamically farmed Auxerrois (80%) & Riesling (20%). Hand-harvested, slow-pressed for 10 hours, the juice spontaneously ferments in vat prior to aging sur latte for 16 months pror to disgorgement. Bottled unfined, unfiltered, no additional SO2. 12%ABV
