The Details

100% Pinot Gris organically cultivated in Okayama. Grapes are hand-harvested, a portion of them are directly pressed while a portion are destemmed and macerate for 2 weeks. Blended and bottled prior to the completion of primary fermentation a la ancestral method. Unfined, unfiltered, minimal added SO2.
