This is a gorgeous blend of Grenache and Carignan, where red fruit breathes a sea-salted wind and finds a plummy, nearly chocolate core, from Laurence Manya-Krief of Domaine Yoyo who tends four hectares of centenary vines in the Roussillon’s Banyuls.
Vinification: A blend of 50% Grenache Noir, Gris, and Blanc and 50% Carignan hand-harvested from 85 year-old vines grown in sandy-granite soils with yields ~20hl/ha. The grapes undergo a 10-day carbonic maceration before full fermentation is completed through spontaneous fermentation at the behest of ambient yeasts. The wine ages for ~6 months in old Burgundy barrels and 400L oak demi-muids before being bottled unfined, unfiltered, with no additional SO2. 13%ABV
