The Details
This is another bright, semi-carbo co-fermented treat from Laurence Manya-Krief of Domaine Yoyo who tends four hectares of centenary vines in the Roussillon’s Banyuls.
Vinification: A blend of 80% Grenache Gris, 15% Grenache Noir, and 5% Grenache Blanc hand-harvested from 80 year-old vines grown in gneiss/granitic sand soils with yields ~25 hl/ha. The grapes undergo a 10 day carbonic maceration with spontaneous fermentation otherwise (ambient yeasts, no temp. control). The wine sees a short elevage in 400L oak demi-muids before being bottled unfined, unfiltered, with no additional SO2.
