This is as elegant a rosé as they come which is to say the most delicious – carignan, long a southern-French blending grape, is granted directly-pressed spotlight in its densest, purest, and indeed – somehow – lightest form in this bottling from Laurence Manya-Krief of Domaine Yoyo who tends four hectares of centenary vines in the Roussillon’s Banyuls.
Vinification: 100% old-vine Carignan hand-harvested from vines grown in gneiss soils. The grapes are gently, directly pressed before undergoing spontaneous fermentation (ambient yeasts, no temp. control) in inox (similar to fiberglass) before seeing a short maturation in tank. Bottled unfined, unfiltered, no additional SO2.
