The Details
100% biodynamically cutlivated Cabernet Franc from Puy-de-Notre Dame in Saumur. Grapes are hand-harvested from old-vines in a lieu dit (Les Vignaux). Destemmed, the grapes macerate for 22 days with pumpovers followed by 18 month élevage sur lie in neutral barrel, 6 months in tank and a further 12 months in bottle before release. Bottled unfined, unfiltered, minimal added SO2.
