The Details

100% organically (dry-farmed) cultivated Carignan from the Ricetti Vineyard in Redwood Valley, California. Grapes are hand-harvested at the end of October, partially footcrushed into tank 100% whole-cluster. Spontaneous fermentation begins and softens the grapes, it was further foot-crushed and continued to macerate thereafter for 10 days prior to pressing to tank. Neutral oak élevage for ~6 months prior to bottling unfined, unfiltered, minimal (10ppm) added SO2. 12% ABV
