The Details
100% Colombard from organically (dry-farmed) cultivated vines at the Ricetti vineyard in Redwood Valley, California. Grapes are hand-harvested the first week of October, and split into two lots, 1.5 tons each. The first is left on the skins for a 24-hour cold soak prior to pressing to a combination of stainless steel and\ neutral oak barrique. The second is left crushed on the skins for 7 days, spontaneously fermenting to near-dryness prior to pressing to tank for the completion of alcoholic fermentation (to dryness). Transferred to neutral oak for ~6 month élevage. Blended and bottled unfined, unfiltered, minimal (10ppm) added SO2. 11% ABV
