The Details

From Cahors, this is biodynamically cultivated Malbec & Merlot from 25 year-old vines planted to clay/limestone soils at altitude in Cahors. Grapes are hand-harvested, destemmed, partially directly pressed and partially bled a la saignée. Spontaneous fermentation and élevage for 6 months sur lie in concrete vat and stainless steel tank. Bottled unfined, unfiltered, minimal added SO2.
