The Details
This is a spicy and oh-so-slightly-rich vin de soif from Fabien Jouves who works several plots of certified biodynamic vines between the towns of Quercy and Cahors in the southern French region of Occitanie.
Vinification: 100% Jurançon Noir hand-harvested from 50 year-old vines grown in calcareous soil. The grapes undergo a 7-day maceration followed by full spontaneous fermentation in cement tanks and barrels with only the help of native yeasts. The juice ages for 6 months in cement tanks and barrels before bottling. Unfined, unfiltered, with (sometimes) a touch (0-30mg/L) of SO2 depending on the vintage. 13%ABV
