The Details
100% Gamay d'Auvergne on basalt négoce from their neighbor. Organically cultivated. Grapes are hand-harvested, macerate for 1 month before pressing. Spontaneous fermentation and aging in fiberglass for ~9 months before bottling unfined, unfiltered, no additional SO2.
